Antonia Lofaso
Antonia's food is a way to explore her life. It is her food that evokes curiosity, which developed as she moved out of her Long Island suburbs and entered the culturally diverse environment in Los Angeles. Cavatelli, carnitas, and various other cuisines can be found in a single menu. It is an ever changing sensibility. Each of her dishes is inspired by a distinct outlook for the future but also with a nostalgic look at the past. Scopa Italian Roots was opened in 2013 by Lofaso and is influenced by her Italian American roots. It received an enthusiastic reception. The interpretation that Lofaso has given to old-school Italian is widely praised as one of the most compelling places to enjoy Italian food within Los Angeles. Lofaso has been consistently loved by the Scopa's customers because the food is authentic and unmistakably satisfying. Lofaso was trained by renowned chefs to master their methods. She was also not afraid making bold choices to honour her instincts. Within a few years she rose to the very top at Wolfgang Puck's Spago. In the following years, she worked alongside many celebrities, and transformed a variety of Los Angeles restaurants. Lofaso along with Sal Aurora partnered in 2011 to create Black Market Liquor Bar Studio City. Through Black Market and the business collaborations she set up, she found a place to call home. This collaboration would foster the creative freedom Lofaso wanted. Black Market does not have any one specific direction, which is the reason why it was created. The course will begin by serving dill-flavored chips on potato Shishito peppers, then continue with Korean Wings. Antonia is the anchor for this bold array of flavours. In her long career Lofaso has judged her accomplishment through her ability to connect with her viewers but still remain authentic to her personality. She's appeared on of many television shows, like Top Chef Chicago, Top Chef: All Stars and Cutthroat Kitchen Man vs. Child on The Food Network and ABC's Real O'neals. Her talents have continued to be showcased as a judge for CNBC's Restaurant Startup. In 2012 Lofaso joined with Penguin to publish"The Busy Mother's Cookbook 100 recipes for quick Delicious Home-cooked Meals, which also tells the story of the obstacles she faced during her time at the prestigious French Culinary Institute, and simultaneously caring for her child Xea. Lofaso believes that all her successes stem from her love of cooking and she is in a position to stay on the pulse of this industry by focusing on the kitchen.
